Dressings are a fun way to enhance any salad, especially during summer. It’s also simple to make your own at home with simple ingredients that create delicious salad dressings. The formula to a delicious salad dressing is two-parts healthy oil to one-part acid (vinegar or fruit juice), meaning you use twice as much oil than the acid. Adding some flavor enhancers will help spice it up as well. Here are five summer salad dressing recipes you should definitely add to your salad this season.

1. Raspberry Vinaigrette

Ingredients:

  • ½ cup of extra virgin olive oil
  • ¼ cup of raspberry vinegar
  • 1 tablespoon of honey
  • Juice from half a lemon
  • 1 tablespoon of chopped chives
  • Pinch of sea salt
  • Freshly ground pepper

Instructions:

  1. Place all the ingredients in a bowl and whisk
  2. Store in mason jars and refrigerate for up to a week
  3. If you want a thick, creamy version of this best salad dressing, put all ingredients, except olive oil, in a blender. Blend, then drizzle olive oil in steadily. Dressing will emulsify and become thick and creamy.

2. Tangerine Dressing 

Ingredients:

  • ½ cup of extra virgin olive oil
  • ¼ cup of fresh tangerine juice
  • 2 teaspoons of honey
  • Zest and juice from 1 small lemon
  • 1 small clove of garlic, peeled and minced
  • Pinch of sea salt
  • Freshly ground pepper

Instructions:

  1. Place all the ingredients in a bowl and whisk
  2. Store in mason jars and refrigerate for up to a week
  3. Add pepper to taste

3. Lemon Poppyseed Dressing 

Ingredients:

  • Poppy seeds
  • ¼ cup of lemon juice
  • ¼ cup of apple cider
  • ½ cup of olive oil
  • 2 teaspoons of honey
  • 1 teaspoon of Dijon mustard
  • Salt

Instructions:

  1. Place all the ingredients in a bowl and whisk
  2. Store in mason jars and refrigerate for up to a week
  3. OR combine all ingredients in a mason jar and shake well
  4. Refrigerate for 1-2 weeks

4. Summer Vinaigrette

Ingredients:

  • 1 smashed clove of garlic
  • 1 tablespoon of white wine vinegar
  • Pinch of sea salt
  • 2 tablespoons of extra virgin olive oil
  • 1 tablespoon of water
  • 1 tablespoon of mint cut into a chiffonade
  • 2 tablespoons of basil leaves cut into a chiffonade

Instructions:

  1. Rub the cut side of the garlic all over the bottom of a large salad or mixing bowl. Discard the garlic
  2. Add the vinegar and the salt to the bowl, whisk until the salt melts
  3. Gradually whisk in the olive oil and then the water (the water makes this dressing light)
  4. Pile the greens on top of the dressing, and just before you are ready to eat the salad, toss with the herbs.

5. Watermelon Vinaigrette

Ingredients:

Instructions:

  1. Add the watermelon pieces to the container of a blender. Blend until pureed
  2. Add honey, apple cider vinegar and mustard. Blend on low speed until well-combined
  3. Slowly add olive oil while the blender is on low speed
  4. Once olive oil is in, increase the speed to completely blend all ingredients
  5. Pour into a container for serving
